40g of fine semolina
75g of butter at room temp
40g of golden caster sugar
75g of plain flour plus a little extra for dusting

Optional icing

75g of sifted icing sugar
1 tablespoon of lemon juice

To make;

Beat the butter in a bowl to soften it.

Beat in the sugar, followed by the sifted flour and semolina.

Work the ingrediants together with a spoon, pressing them to the side of the bowl, then finish off with your hands until you have a smooth mixture that leaves no bits in the bowl.

Transfer the dough to a flat, lightly dusted surface and roll it out thinly to about 3mm.

Cut out your chosen shapes. I usually do hearts or stars!

Bake them for about 15-20 mins or until golden brown. Then cool them on a wire rack.

When cold, if you like, ice some of them with lemon icing.

Enjoy!
