2c self raising flour
1/2 c sugar
1 egg
1/2c oil
1 - 1.5c milk
1tsp vanilla essence

1c fruit or sweet filling
(for savoury muffins minus the sugar and vanilla essence, use a pinch of salt, 1/2c cheese, then 1c other fillings)

Mix together. Should be a runnier mix. Bake at 180 for 15-20mins (till lightly golden and bouncy to touch)

Please note a CUP = 250mL
